Browned Butter Sage Sweet Potatoes and Apples

In the winter, warm side dishes like these Sage Sweet Potatoes and Apples are total favorites of mine. I mean, is there anything about that recipe name that doesn’t scream comfort food?

Winter can be a struggle for me. Let’s just say that Seasonal Affective Disorder is definitely a thing, and it affects a lot of people whether they realize it or not. I certainly recognize it this winter. I feel incredibly lazy, and most of the time I just want to lie around. It’s just not a fun time.

To make it worse, I live in North Dakota.

That may not immediately inspire empathy, but hear me out. Normally this time of year, we’re dealing with -20 degree weather. Every. Single. Day.

We’re actually lucky this year. It’s been in the 20s and 30s. It actually almost crept up to 40 last week! That’s crazy warm for this time of year. Especially considering those were non-windy days. Because cold that’s just sitting there can totally be dealt with. It may be mildly uncomfortable, but not a huge deal. Add 20 mph winds to <0 degree weather, and we have a problem. Not only is it as cold as your mother-in-law’s glare, it pierces your soul the same way. Coats, no matter how puffed up from insulation, don’t seem to help, because regardless of how many layers of gloves, scarves, hats, hoodies, leggings, boots, etc. you’re wearing, the wind finds a crack and swarms in the way you imagine angry bees would. After all, you’ve never really felt cold unless the air stings and bites your skin. *shudder* It may not be bad now, but I know those subzero temps are coming.

In the end, though, all of that just means I get to spend more time in my kitchen, where cooking kills two birds with one stone—I’m making awesome food and heating my apartment. That’s a definite win-win! I don’t make many cold, no-cook dishes in the winter. I prefer food that warms me from the inside out.

Sweet potatoes have always been a favorite of mine, but I only recently tried white sweet potatoes. WOW, are they good! I had just bought some fresh sage, so I knew I would have to think up a recipe that allowed both flavors to shine. Well, this is it. A wonderfully warming dish that’s just a touch of sweet. It would make a wonderful addition to a holiday meal!
