Description

This Brat, Potato, and Sauerkraut Stew is an excellent Midwest winter dinner to pair with a fluffy blanket and Netflix binge-watching.


Ingredients

Scale
  • 2 medium russet potatoes, cubed (23 cups)
  • 1 medium apple, cubed (11.5 cups)
  • 1 small onion, diced (1/23/4 cup)
  • 1/4 cup 100% apple juice (or use homemade)
  • 1/2 cup bone broth
  • 1 tsp cumin seeds
  • 1 garlic clove, minced
  • 1 lb bratwurst, cut into 1” chunks
  • 2 cups sauerkraut
  • 6 slices bacon, cooked

Instructions

  1. In a 5 qt crockpot, combine the potatoes through garlic. Layer bratwurst overtop.
  2. Cook on low for 4-5 hours or until potatoes are tender and bratwurst is cooked through.
  3. Add the sauerkraut and stir to combine everything and warm the sauerkraut. Crumble bacon overtop and serve.
