I started this website (originally known as DoYouEvenPaleo.net) to bring you along on my quest for flavor on my plate and in my life. Along the way, I'm honing my cooking skills, leaning new things, and always creating meals that are nourishing and satisfying — but not boring.
Life should be full of flavor, both on your plate and in everyday life.
Most of the recipes you'll find here are paleo or gluten free, because that's what works for my body. Whether or nor you eat that way, though, you'll find that these recipes are keepers. After all, as I said, life should be full of flavor!

In May 2013, I was going through a rough patch in my life. After the end of a toxic relationship and losing most of my friends in the process, I found myself depressed and struggling with the bottomed-out self esteem that had plagued me my entire life. I'd had enough of feeling like life was a burden.
While browsing the internet, I happened to see a quote that resonated with me: "When I loved myself enough, I began leaving whatever wasn't healthy." Within the same week, I discovered what Paleo and CrossFit were. I kept reading peoples' anecdotes about them - how, after going Paleo/starting CrossFit (or both), they felt happy, empowered, invigorated. That's what I wanted in my life! I promptly signed up for a local CrossFit box and cleaned out my pantry. Grains, gluten, legumes, sugar, soy, dairy, and preservatives were all purged.
Those actions changed my life.
About a year after finding CrossFit and Paleo, I realized I needed a new hobby. I'd dabbled in blogging before, and realized there was value in the cooking skills I learned and recipes I created. This website was born!
I've since left the paleo label behind, but my obsession with learning new cooking skills and creating recipes still remains.
While I am not a nutritionist, dietitian, or even something close, I hope that what I share on Chelsea Joy Eats helps you make nourishing meals, learn something new in the kitchen, or just want to make a really damn good meal.

I am just learning to use plantains for more than fried chips. I have tried your flourless plantain cake a few times with relatively yellow ones. I find them sweet enough to eat raw so will use a less ripe plantain next time.
I have a question for you. First time making this recipe it came out great--both taste and texture. However the next 2 times the cake never got dry. Once I poured in onto a flat sheet and the edges almost burned but the center was very wet. Yesterday I used a regular cake pan. It rose in the oven like a balloon, turned gorgeous golden and then collapsed when cooled. A fork stuck into it came out clean but the center was still overly wet.
Am wondering what the formula is between eggs and plantain as there is nothing else other than the baking soda in it. I used 4 eggs to 15.5 oz plantain once; 15.1 oz plantain with 3 eggs yesterday. No difference. It tasted delicious, and was very sweet. Green bananas next time!

Hi, tanya! Thanks for commenting. Unfortunately I don't weigh my ingredients so I'm not sure if I'll be able to help you out. It sounds like you're using 1 plantain each time you make the cake - in that case, I'd use 2 eggs and 1/3 teaspoon of baking soda, since 1 large plantain would be 1/3 of the recipe. You'd also want to be careful to bake it in a small enough pan...I used a 10" cast iron skillet (about the size of a normal cake pan), but that's for a cake with 3 plantains and 6 eggs!
Plantains can be difficult to bake with because they vary so drastically depending on how ripe they are. I have the best luck baking with yellow-brown plantains. You mentioned that's very sweet to you, so you're experimenting with plantains that aren't so ripe - because the sugar content is different in unripe vs ripe plantains, that affects how it bakes. So your cake might be mushy because of that - baking a cake with unripe plantains might need something more than just eggs and baking soda to make a great texture. Down the road I might experiment more with this!

Thank you so much for your post on HS story of yours and how you treated it. My doctor suggested that i should try elimination diet and after her suggestions I am finding on the internet many people’s journey through HS and how diet changes have helped them achieve remission. I am starting my Paleo diet today with high hopes of healing myself from HS. Thanks for your post. I am so glad for your successful cure with diet change. God bless.

I have had HS for about 15 years; surprisingly, it didn't start at puberty. It started shortly after moving from Memphis TN to San Antonio TX, so I wonder if there was an environmental part of HS.
I completely agree with the diet you recommend. I cut out most processed foods, eat lots of veggies and fruits, and one of my secret weapons is unsweetened tea. I don't add anything to it, but it's packed with antioxidants. These definitely help.
About 10 years ago it got really bad; I was always exhausted and sleeping 14 hours a day. I went to the OB and got put on low-dose birth control pills, which helped with both the fatigue and disease.
A couple of years later a good friend talked me into exercising with him. My disease went back to stage 1 as far as fresh breakouts but of course I still have old scars. I'm about to make a return to the gym and resume swimming and weightlifting.
I'm also mostly done with menopause, and that didn't help either.
So...yes. I agree with you. And maybe my info will help someone else.
Thank you for your site. In the beginning all the forums I found were occupied with people who didn't want to fight, so I quit looking. I'm glad to see someone else who isn't cool with HS running her life! Keep it up!

hi. i think i have it too. non stop boils all over my body but more on thighs and buttocks. it will start as an itch then turn into small boils. glad found your site and know that I am not alone. ive been stressed most of my life. now will try to control it. thank you.

Hi Lynn! It should keep in the fridge for up to a week...but the crust might get a little soggy if it sits overnight. Hope that helps!

I have been struggling since I was 14 as well and I’m still trying to figure out what is best. I was reading how you didn’t have a brand of underwear you have found to be working.
