My goals with ChelseaJoyEats.com are to eat simply and live fully.
I started this website (originally known as DoYouEvenPaleo.net) to bring you along on my quest for flavor on my plate and in my life. Along the way, I'm honing my cooking skills, leaning new things, and always creating meals that are nourishing and satisfying — but not boring.
Life should be full of flavor, both on your plate and in everyday life.
Most of the recipes you'll find here are paleo or gluten free, because that's what works for my body. Whether or nor you eat that way, though, you'll find that these recipes are keepers. After all, as I said, life should be full of flavor!

In May 2013, I was going through a rough patch in my life. After the end of a toxic relationship and losing most of my friends in the process, I found myself depressed and struggling with the bottomed-out self esteem that had plagued me my entire life. I'd had enough of feeling like life was a burden.
While browsing the internet, I happened to see a quote that resonated with me: "When I loved myself enough, I began leaving whatever wasn't healthy." Within the same week, I discovered what Paleo and CrossFit were. I kept reading peoples' anecdotes about them - how, after going Paleo/starting CrossFit (or both), they felt happy, empowered, invigorated. That's what I wanted in my life! I promptly signed up for a local CrossFit box and cleaned out my pantry. Grains, gluten, legumes, sugar, soy, dairy, and preservatives were all purged.
Those actions changed my life.
About a year after finding CrossFit and Paleo, I realized I needed a new hobby. I'd dabbled in blogging before, and realized there was value in the cooking skills I learned and recipes I created. This website was born!
I've since left the paleo label behind, but my obsession with learning new cooking skills and creating recipes still remains.
While I am not a nutritionist, dietitian, or even something close, I hope that what I share on Chelsea Joy Eats helps you make nourishing meals, learn something new in the kitchen, or just want to make a really damn good meal.
