- 2 pounds brussels sprouts, trimmed and sliced
- 8 strips of bacon, chopped
- 1/4 teaspoon sea salt
- 3 tablespoons stoneground mustard
- 4 tablespoons honey
- 2 tablespoons mayonnaise
- 1 teaspoon apple cider vinegar
- 2 tablespoons reserved bacon fat
Instructions
- Heat a skillet over medium-high heat. Add the bacon and cook for 5-8 minutes, stirring occasionally, until crisp. Use a slotted spoon to remove the bacon and set aside. Remove all but 2-3 tablespoons of the bacon fat from the skillet, reserving what you remove for the dressing.
- Add Brussels sprouts to the skillet. Cook for 8-10 minutes, stirring occasionally, until the Brussels sprouts are tender and vibrantly green.
- Meanwhile, prepare the honey mustard dressing. In a small mixing bowl, whisk together the mustard, honey, mayonnaise, and apple cider vinegar. Slowly drizzle in 2 tablespoons of the reserved bacon fat, whisking constantly, until the mixture becomes creamy.
- Add the cooked bacon and honey mustard dressing to the Brussels sprouts, gently stirring to coat everything. Remove from heat and serve immediately. Store in an airtight container in the fridge for up to a week.
