Description
Peanut Butter and Banana Chia Pudding combines peanut butter, chocolate, and banana for an easy, low sugar treat. Use sunflower seed butter and omit the peanut butter powder for a nut free alternative!

Chia Pudding
- 1 ripe banana
- 2 cups milk or milk alternative (coconut milk works well)
- 1/2 cup + 1 tablespoon chia seeds
- 2 tablespoons peanut butter powder
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
Toppings
- 1 ripe banana, sliced
- 1/4 cup creamy peanut butter or sunflower seed butter
- 1/4 cup chopped dark chocolate (I like Equal Exchange bars)
Instructions
- Add the banana to a bowl or mason jar and mash with a fork. Add the milk or milk alternative, chia seeds, peanut butter powder, vanilla, and cinnamon, stirring until fully mixed. Cover and transfer to the refrigerator to set at least 4 hours to overnight.
- After the chia pudding has set, you can separate into individual containers and divide the toppings between them, or top with sliced banana, dollops of peanut butter, and chopped chocolate and mix it in before dividing. Keep covered in the fridge for up to 1 week.
