  • 1 pound carrots, sliced lengthwise into halves or quarters of similar size
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • For garnish: 1 tablespoon chopped fresh parsley


  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Add the carrot sticks to the baking sheet. Drizzle with olive oil and sprinkle with spices, tossing to coat. Spread the seasoned carrot sticks into a single layer and roast for 15 minutes. When serving, garnish with parsley if desired.
