- 3 teaspoons olive oil, divided
- 16 ounces lean ground beef
- 1/4 cup homemade teriyaki OR 1/4 cup store bought teriyaki
- 1 1/2 tablespoons minced garlic (about 4 cloves)
- 1 1/2 tablespoons minced fresh ginger
- 2 cups cooked basmati rice
- 1 head baby Bok choy, washed and trimmed
- 2 cups snow peas or sugar snap peas
- sliced green onions, for garnish
- matchsticked radishes, for garnish
- sesame seeds, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking up the beef into smaller chunks with a wooden spatula as you go, for 5-6 minutes or until mostly browned.
- Add the teriyaki, garlic, and ginger, stirring to incorporate. Continue to cook until most of the liquid has been absorbed. Remove the beef from the skillet.
- Heat the remaining teaspoon olive oil in the skillet without wiping it out. Add the bok choy and snow peas, cooking for 3-4 minutes while stirring frequently. Turn off heat.
- Divide beef, vegetables, and rice between 3-4 bowls. Top with sesame seeds and sliced green onions, if desired.
