Ground Beef Teriyaki Bowls

Ingredients

  • 3 teaspoons olive oil, divided
  • 16 ounces lean ground beef
  • 1/4 cup homemade teriyaki OR 1/4 cup store bought teriyaki
  • 1 1/2 tablespoons minced garlic (about 4 cloves)
  • 1 1/2 tablespoons minced fresh ginger
  • 2 cups cooked basmati rice
  • 1 head baby Bok choy, washed and trimmed
  • 2 cups snow peas or sugar snap peas
  • sliced green onions, for garnish
  • matchsticked radishes, for garnish
  • sesame seeds, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking up the beef into smaller chunks with a wooden spatula as you go, for 5-6 minutes or until mostly browned.
  2. Add the teriyaki, garlic, and ginger, stirring to incorporate. Continue to cook until most of the liquid has been absorbed. Remove the beef from the skillet.
  3. Heat the remaining teaspoon olive oil in the skillet without wiping it out. Add the bok choy and snow peas, cooking for 3-4 minutes while stirring frequently. Turn off heat.
  4. Divide beef, vegetables, and rice between 3-4 bowls. Top with sesame seeds and sliced green onions, if desired.
