One Skillet Pork Chops with Apples & Onions

  • 3 teaspoons extra virgin olive oil, divided
  • 1 1/2 cups sliced yellow onions
  • 2 cups thinly sliced apple wedges (1-2 large Gala, Braeburn or Granny Smith apples)
  • 1 tablespoon ghee or butter, divided
  • 2 teaspoons fresh thyme
  • 1/2 teaspoon kosher salt, divided
  • 1/2 teaspoon ground black pepper, divided
  • 4 bone-in center-cut pork loin chops (6 ounces each, about 1/2 inch thick)
  • 1/2 cup bone broth
  • 1/2 teaspoon arrowroot powder
  • 1 teaspoon apple cider vinegar


  1. Preheat oven to 400°F.
  2. Heat a large cast iron skillet over medium-high heat. Add 1 teaspoon olive oil to pan and swirl to coat. Add onions to the skillet and cook for 2 minutes or until lightly browned, stirring once. Add apple wedges to the skillet and transfer to the preheated oven. Bake for 10 minutes or until onions and apple are tender. Remove onions and apples from skillet and stir in 2 teaspoons ghee, thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
  3. Return the now empty skillet to the stove, heating it over medium-high heat. Sprinkle pork chops with remaining salt and pepper. Add remaining oil to pan and swirl to coat. Add pork chops to skillet and cook for 3 minutes on each side (or until your desired degree of doneness). Remove pork from pan and keep warm.
  4. Whisk broth and arrowroot powder in a small bowl. Add broth mixture to pan and bring to a boil, scraping the bottom of the skillet to loosen browned bits. Boil for 1 minute or until reduced by half. Stir in vinegar and remaining 1 teaspoon ghee. Serve pork chops and apple mixture smothered in sauce.
