Strawberry Cottage Cheese Ice Cream with Protein

Description

Ultra-creamy and packed with protein, the viral Cottage Cheese Ice Cream gets a fruity flavor boost from fresh strawberries and protein powder!


Ingredients

Scale
  • 15 oz full fat cottage cheese
  • 1/4 cup honey
  • 1/2 cup strawberry protein powder (My preferred brand is Equip Prime Protein. If you'd prefer to skip the protein, see notes!)
  • 1/2 cup chopped strawberries (fresh or frozen)

Instructions

  1. Add cottage cheese, honey, and protein powder to a high-powered blender and blend until smooth.
  2. Pour into a loaf pan or other freezer-safe container. Add the strawberries and stir to incorporate. Move the loaf pan to the freezer. For best results, stir the ice cream every 30 minutes for at least 3 hours to break up larger chunks and prevent icing. (Alternatively, use an ice cream machine and follow manufacturer directions.)
  3. Let thaw at least 30 minutes before scooping and serving. Cottage cheese ice cream is very rich and thick, so it doesn’t scoop quite as easily as ice cream, but it’s worth it!

Notes

If you want to skip the protein or don't have strawberry protein powder, increase the strawberries to 1 cup. Add 1/2 cup strawberries to the blender, reserving the other 1/2 cup for mixing in.
