Description

You'll want the easy maple mustard sauce over everything for this high protein meal. Salmon, brussels sprouts, and sweet potato all make this an easy dinner on one sheet pan!


Ingredients

  • 1 pound brussels sprouts, trimmed and sliced in half
  • 1 large sweet potato, diced
  • 1 1/2 lb salmon, cut into 4 equal pieces if necessary
  • 1 1/2 teaspoons salt, divided
  • 2 tablespoons + 2 teaspoons olive oil, divided
  • 3 tablespoons maple syrup
  • 2 tablespoons stone ground mustard
  • 1 1/2 tablespoons tamari/soy sauce

Instructions

  1. Partially roast vegetables. Preheat oven to 425 F. Spread brussels sprouts and sweet potatoes out on a large rimmed baking sheet. Season with 1 teaspoon salt and drizzle with about 1 tablespoon olive oil, tossing to coat. Roast for 15 minutes.
  2. Prep salmon. Meanwhile, season the flesh side of salmon with the remaining salt. Set aside.
  3. Prep sauce. In a small bowl, combine remaining olive oil, maple syrup, mustard, and tamari/soy sauce.
  4. Add salmon and sauce. After 15 minutes, take the baking sheet out of the oven and stir the sweet potatoes and brussels sprouts. Make room on the baking sheet for the salmon, nudging the vegetables aside for space. Place the salmon skin side down on the baking sheet without overlapping. Pour the maple mixture over the salmon fillets, using a brush if desired to make sure the fillets are coated.
  5. Roast. Roast for another 10-12 minutes, until the salmon flakes easily with a fork.

Notes

  • For the best browning and crispy salmon skin, skip the parchment paper and roast directly on the sheet pan.
  • Feel free to swap out the vegetables for others with a similar cook time, like broccoli, cauliflower, or potatoes.
