Description

Cottage cheese toast with so many recipe ideas! Always toast the bread and cool slightly before topping to avoid soggy toast. If the topping combinations below don't speak to you, view the post above for LOTS of topping ideas!

Ingredients

Scale

Cottage Cheese Toast

  • 1 slice bread (I like using sourdough or a hearty, multigrain variety)
  • 1/4 cup cottage cheese
  • Topping ingredients from the ideas below

PB Classic

  • 1 small banana, sliced (or 1/2 large banana)
  • 1-2 tablespoons creamy peanut butter
  • 1/4 teaspoon cinnamon

PB&J

  • 2 tablespoons jam or jelly (any flavor)
  • 1-2 tablespoons creamy peanut butter

Summertime

  • 1/2 cup sliced strawberries
  • 1 tablespoon honey
  • chopped mint

Apple Pie

  • 1 apple, sliced thin (Granny Smith or Gala work well) (alternatively, use roasted cubed apple)
  • 1/4 teaspoon cinnamon
  • 1 tablespoon toasted chopped nuts, such as pecans or walnuts

Sweet & Spicy

  • 1 mango, sliced
  • 1/4 teaspoon chili powder
  • pinch of sea salt

Nordic

  • 1/4 cup smoked salmon, skin removed
  • 1/4 cup greens/microgreens
  • 1 tablespoon fresh dill

Savory Breakfast

  • 1/2 avocado, sliced or mashed
  • 1-2 radishes, sliced
  • 1/2 tablespoon everything bagel seasoning

Mediterranean

  • 1/4 cup chopped tomato
  • 1/4 cup chopped cucumber
  • 1-2 teaspoons balsamic drizzle

CLT

  • 1/4 cup arugula or spinach
  • 1/2 large tomato, sliced
  • pinch of salt + pepper

Instructions

  1. Toast the bread in the toaster, using the broiler setting of your oven for 1-2 minutes on each side, or in a skillet on the stovetop over medium high heat for 1-2 minutes on each side. Let cool slightly before adding toppings.
  2. Spread the cottage cheese over the toast. NOTE: some combinations will work better with another ingredient on the bottom before the cottage cheese, such as avocado, arugula/spinach, or jam/jelly.
  3. T0p with remaining toppings from the recipe combos above, or create your own combination!
