Whipped Cottage Cheese Fruit Dip (High Protein)

Description

Just 2 ingredients makes a tasty dip with over 20 grams protein per serving!

I highly recommend using Equip Protein Powder, as its high gelatin content helps to thicken the dip. However, if using a whey- or plant-based protein, make sure you use gelatin to thicken things up.


Ingredients

  • 1 16-oz container cottage cheese, low fat (2%) or full fat (4%)
  • 2 scoops vanilla protein powder
  • 1 tablespoon gelatin (optional, but recommended if you aren't using my recommended protein powder!)

Instructions

  1. Blend: Add the cottage cheese and protein powder to a high-powered blender.  Blend, starting on low and increasing to high, until completely smooth.
  2. Thicken [optional]: If you aren't using Equip protein or other beef-based protein powder, use gelatin to help thicken the dip. Sprinkle the gelatin ove 2 tablespoons of water in a microwave-safe bowl and set aside to let it "bloom" for a minute or two. Microwave the mixture for 10 seconds to dissolve. Turn the blender on to low and pour the dissolved gelatin into the cottage cheese mixture.
  3. Let it set: Transfer the cottage cheese mixture to a bowl. Cover and refrigerate for at least 2 hours or up to a day. Serve with fruit or crackers. Store, covered, in the refrigerator for up to 2 weeks.
