Plantain: You can use ripe or unripe plantains for this frittata recipe, but my favorite are yellow plantains! Yellow plantains are ripe but not overly ripe like you'd need for a Flourless Plantain Skillet Brownie, so they're slightly sweet. You can use greener plantains as well, but the frittata will be missing that slightly sweet factor.
Bacon: I opt for thick-cut bacon for recipes like this! You'll need 8 ounces, which is approximately 8 slices depending on how thick they are.
Chives: Fresh chives are the way to go. This is a wonderful gluten free spring recipe when fresh chives are in season. I have a chive plant in the garden that I use for recipes like this!
Eggs: Of course, you'll need eggs for a frittata! A dozen eggs ensures each serving has a good amount of protein.

How To Make a Plantain Frittata

Step 1: Preheat oven to 375 degrees F. Peel the plantain and slice it into thin strips.

Step 2: Chop bacon into 1" pieces and fry for 3-5 minutes in a cast iron skillet over medium-high heat, until crispy. Remove from skillet.

Step 3: Reserve 1-2 tabelspoons bacon fat in the skillet and return to heat. Place plantain strips along the bottom of the skillet. Cook for 5-6 minutes, flipping halfway through. Turn off heat.

Step 4: Meanwhile, add eggs, salt, pepper, and chives to a large mixing bowl. Whisk until light and frothy.

Step 3: Pour the eggs into the skillet and immediately transfer to the oven. Bake for 15-18 minutes, until eggs are set.

Step 4: Remove from the oven and let cool for a few minutes before slicing and serving. Top with additional chives, hot sauce, or cheese, if desired.
Variations and Substitutions
Add cheese - 2 ounces of goat cheese sprinkled into the egg mixture just before popping in the oven is heavenly! Otherwise, you can top with shredded cheese or goat cheese right after removing from the oven.
Fluffier eggs - I specifically kept this frittata recipe dairy free and don't feel that you need milk for a good frittata. That said, you beat ⅓ cup milk into the eggs for a fluffier frittata.
Adjust herbs - If you don't have fresh chives on hand, you can use different fresh herbs or a blend. I'd suggest parsley, thyme, scallions, or oregano.

Top Tips from Chelsea
Whisk eggs just before adding to skillet. If the whisked eggs sit too long, they'll lose all the air and lift you added to them. Whisking just before adding to the skillet and immediately transferring to the oven gets you the fluffiest dairy free frittata!
Not dairy free? If dairy doesn't bother you, you can add to the fluffiness of a frittata by beating up to ⅓ cup milk with the eggs.
Topping ideas: Top off the frittata with a drizzle of hot sauce, Creamy Poblano Sauce, more fresh chives, salsa, or shredded cheese.
Plantain Frittata FAQs
Without milk, I suggest beating the eggs until they're light and fluffy immediately before adding to the skillet and popping in the oven. If the beaten eggs sit around while you're prepping the bacon and plantain, the air bubbles you've whisked in will dissapate.
If you can handle dairy or want to try using a non-dairy milk for this frittata, beat ⅓ cup with the eggs.
I suggest using yellow plantains, which are slightly sweet, for a sweet and savory vibe for this frittata. It's a great combo with bacon!
That said, you can use green (not as sweet) plantain as well. I'd suggest adding goat cheese or a little fresh thyme to the frittata in that case.
For 4 servings, I typically use a dozen eggs. This ensures a good amount of protein per serving!

Ingredients
- 8 ounces uncured bacon
- 1 large ripe (yellow) plantain, peeled and sliced into long thin strips
- 12 eggs
- ¼ cup thinly sliced chives
- ¼ teaspoon sea salt
- ⅛ teaspoon freshly cracked black pepper
Instructions
- Preheat the oven to 375 degrees F.
- Crisp bacon. Heat a large (10 to 12 inch) cast iron skillet over medium-high heat. Chop the bacon into 1-inch pieces. Add to the skillet and cook for 8-10 minutes, stirring occasionally, until the bacon is crispy. Transfer the bacon to a plate. Pour out about half of the bacon fat, reserving 2-3 tablespoons and keeping the skillet over heat.
- Pan-fry plantain. Lay plantain strips in the cast iron and fry for about 2 minutes, until lightly browned, in the reserved bacon fat. Flip the plantain strips and cook for another 2-3 minutes. Turn off heat.
- Beat eggs. Crack the eggs into a large bowl and add chives, sea salt, and black pepper. Beat vigorously with a wire whisk or a fork until light and frothy. Sprinkle the crisped bacon back into the skillet, followed immediately by the beaten egg mixture.
- Bake frittata. Transfer the skillet to the oven and bake for 15-18 minutes until the eggs are cooked through. Cool for a few minutes before slicing and serving. If desired, top with hot sauce, salsa, or additional fresh chives.
Notes
For an extra-fluffy frittata, beat the eggs until frothy just before adding to the pan, while the plantain strips are frying. This adds extra oxygen to the egg mixture that doesn't have time to escape before you pour it in and cook.
