These protein muffins are gluten free and totally paleo. Yes, paleo—because Equip Prime Protein is made with beef protein, not whey, making it dairy free!
In the interests of transparency, Equip Foods sent me a bag of protein powder to experiment with. However, all opinions are my own—I seriously freaking love Prime Protein! I recently fell head over heels for Equip Prime Protein. (Spoilers: get 20% off at checkout with code DOYOUEVENPALEO)
I decided to give it a try after the last of my old brand of protein ran out. Primary reason? I wanted to give non-dairy protein a try.
The story behind why is kind of long and I intend to write a post about it, but just to shorten things up: I want to cut out pretty much all dairy (I have to say "pretty much" because I still occasionally have cheese when I eat out) and I realized I was still drinking whey almost every day. That's gotta go.
So I bought both the Vanilla and Chocolate flavors of Equip Prime Protein. I'd heard pretty good things from others. Couldn't hurt to try it myself, right?
Holy balls. It was love after first sip. I wish I would have tried this stuff a looooong time ago.
Suffice to say, I instantly became a superfan and started telling everyone at the gym to smell my protein. Cause the chocolate protein smells like brownies. For real. It tastes like brownies, too. For real!
Of course, I immediately decided to bake with the stuff. A few test runs later, and I had the most unbelievably luscious double chocolate protein muffins. Originally, I baked them to bring to the gym for one of the CrossFit Games Open workouts.
I selfishly kept about 6 at home.
I'm kinda glad I did, though, because those things disappeared FAST.
These double chocolate protein muffins are almost too good to believe. They're packed with chocolate, totally sugar free, and 110% percent awesome.
Heck, you could leave out the Enjoy Life mini chocolate chips and they'd still be unreal.
When I have a batch of these protein muffins on hand, I grab one in the morning as I head to the gym... And I have to remind myself that these muffins have protein, because it tastes like dessert. Frankly, these could be called protein cupcakes. They're that damn good.
Oh, and don't worry. A recipe using the Vanilla Equip Prime Protein is comin' at you soon, too. (UPDATE: Go get the recipe for Blueberry Protein Muffins here!)
But first, get yourself a bag of Chocolate Equip Prime Protein and make these muffins!

Hi! Do you have nutrition facts available for these?
Chelsea says
Hi, Christa! At this time, I don’t post nutritional information for my recipes. I’m a one-woman show over here and I simply don’t have the time for it! There are awesome websites like myfitnesspal that allow you to plug in a recipe to find that stuff out for yourself, though!
Lani Morton says
I made these, and wow! Outstanding - just like a delicious chocolate cupcake. I too was curious about the nutrition counts, so I thought I’d share my calculations:
Per one muffin: 208 calories; 13.2 fat; 17.6 carbs; 3.4 fiber; 9.25 sugar; 8 protein
Thanks for the awesome recipe,

You're welcome, Lani!

Hi, these look amazing! I do wan to try but wonder if I can just use regular flour or Almond flour? I'd mainly be making for my 12 years growing son who doesn't like coconut anything. I think I can swap the oil for butter but wonder about the four swap. Thanks!
Chelsea says
You could try that swap, but you'd have to use at least 1 cup of either flour or almond flour instead of the 1/3 cup coconut flour. Coconut flour soaks up a lot of moisture so typically you use less of that than regular flour - so it's a hard swap to make and I'm not sure if it would work! However, you definitely can't taste anything coconut in the finished muffins - coconut flour and coconut oil are fairly mild-tasting and the stronger flavors of the chocolate protein powder and bananas cover any coconut flavor right up.

Glad to hear that, Scarlet!

can I leave the banana out? Could I substitute ghee instead ,if so how much?
★★★★★
Chelsea says
I've not tried subbing the banana, but the best substitute I know of would be unsweetened applesauce! If all you have is ghee, you could try substituting about 3/4 cup ghee for all 3 bananas. The muffins will be less sweet that way, though.
