Ingredients for Feta Greek Salad
CHICKEN BREAST: We grill chicken breast in bulk for our lunches, but you can prepare chicken breast in a cast iron skillet, use rotisserie chicken, or whatever leftover chicken you have.
CHICKPEAS: Canned chickpeas work just fine for this recipe and keep prep simple! Make sure to drain and rinse them before using.
TOMATOES: Roma tomatoes work well for this recipe, since they don't have as much juice. However, if you prefer to use another type of tomato, squeeze out the seeds and extra juice and you should be good to go.
CUCUMBERS: I like using English cucumbers because the skin isn't quite as tough, but use any cucumbers you'd like!
FETA CHEESE: Feta adds a little healthy fats while also boosting the protein in this salad! Grab a block of feta, not crumbled feta, for this recipe. It'll be easy to slice into 5 strips and separate between bowls.
HERBS: Fresh oregano, dill, and/or parsley add even more flavor to this salad! Feel free to mix and match between the 3 based on what you have available.
I've made these salad bowls with only oregano, oregano + dill, and oregano + parsley - they all work!
LEMON JUICE: A simple vinaigrette made with lemon juice, red wine vinegar, and olive oil adds brightness to this feta Greek salad without overdoing it.

Instructions for Greek meal prep bowls
- Chop chicken, veggies, etc.: Prepare the chicken, tomatoes, cucumbers, fresh herbs, and feta cheese by chopping all of them.
- Prep lemon vinaigrette: In a small bowl, combine the lemon juice, red wine vinegar, and olive oil. Whisk to combine.
- Assemble bowls: Get your meal prep bowls ready. (I like Snapware glass bowls - the square ones are my lunch go-tos!) Divide the tomatoes (roughly .4 cups), cucumbers (roughly .8 cups), chicken (roughly ¾ cup), chickpeas ( roughly ½ cup), and feta cheese (1.75 ounces) between the bowls. Sprinkle fresh herbs overtop. Drizzle dressing overtop.
Variations and substitutions
Want to switch things up? Here are a few options and ideas:
- Add rice or quinoa: ½ cup of cooked rice or quinoa per bowl adds a few more carbs and bulks up the meal if you need it!
- Omit or swap out chicken: If you don't need or want the protein, you can omit the chicken and enjoy this as a feta Greek salad. You can also swap the chicken for tofu or salmon.
- For dairy free, omit feta: Can't do dairy? Omit the feta cheese or use a dairy-free cheese instead.
- Mix and match herbs: You can use oregano, dill, parsley, cilantro, savory, or even thyme. As long as you use about 4 tablespoons of chopped herbs total, you can mix and match as needed. I do recommend using oregano as one of your herbs to keep that Greek flavor profile as a base!
- Add other veggies: Red onion or bell peppers make a great addition to these meal prep bowls!

Great question! Layer the ingredients with the hardiest on the bottom and softest towards the top. This means you'll add the cooked chicken, chickpeas, and feta to the bowl first. Then add the dressing, herbs, tomatoes, and cucumbers.
If you make substitutions, keep this in mind - veggies should always be near the top unless they are already marinated (artichoke hearts, roasted bell peppers).
Yes, simply omit the feta cheese or use a dairy free alternative. Note that this will affect the overall macros and protein content, as feta does provide a decent amount of protein per bowl (about 7 grams).
The easiest way, in my opinion, is to add more chicken! Increasing from ¾ cup per bowl to 1 cup per bowl adds 10 more grams of protein.

- Get all ingredients ready before dividing: This may just be my preference, but I like to have all the ingredients chopped and ready to go before I start dividing.
- Layer ingredients: Typically, I layer ingredients in the containers based on how hardy they are. For this recipe, I'd put chickpeas and chicken on the bottom. That way, the dressing that accumulates on the bottom will more or less marinate those ingredients. Follow those up with feta, cucumbers, and tomatoes before sprinkling on the dill and oregano.
You can mix it all up before eating. Layering in this way helps prevent the cucumber and tomato from getting mushy while sitting in the fridge all week.

- 2 cans chickpeas, drained and rinsed
- 2 English cucumbers, chopped (about 4 cups)
- 3 large or 4 medium roma tomatoes, seeded and chopped (about 2 cups)
- 8 ounces feta cheese, cut into ½" cubes
- 20 ounces cooked chicken breast, cut into 1" pieces (about 3 ¾ cups)
- 2 tablespoons chopped fresh oregano
- 2 teaspoons chopped fresh dill
- 2 tablespoons olive oil
- ¼ cup red wine vinegar
- 3-4 tablespoons lemon juice
Instructions
- PREP: Lay out 5 similar-sized bowls or containers to divide ingredients into. If you haven't yet, chop cucumbers, tomatoes, feta cheese, and chicken breast.
- DIVIDE: Divide chickpeas, cucumbers, tomatoes, feta cheese, chicken breast, oregano, and dill between the 5 containers. For best storage results, layer the ingredients with chickpeas, chicken, and feta on the bottom, with vegetables and herbs on top.
- POUR DRESSING: In a medium bowl, combine olive oil, red wine vinegar, and lemon juice, whisking until emulsified. Pour about 2 tablespoons dressing into each bowl.
- COVER & STORE: Cover each bowl and store in the fridge for up to 5 days.
