I first jumped on the TikTok bandwagon of blended cottage cheese because I was intrigued by the protein content of cottage cheese.
I've been more or less hooked ever since, actively incorporating blended cottage cheese in whatever ways I can.
In this egg salad recipe made with cottage cheese instead of mayonnaise, you end up with the same creamy egg salad with a bit of a protein boost from blended cottage cheese.

Ingredients
- Cottage cheese: My go-to brands are Good Culture and Nancy's! For the thickest, creamiest base for this egg salad recipe, I suggest using 2% or full fat cottage cheese. But if you're okay with a slighly more liquidy salad, you can pick low fat of 1% cottage cheese.
- Hard-boiled eggs: Since eggs are the main ingredient, I highly suggest using the best-quality eggs you can. Free range is best! You can use whatever method you'd like for hard-boiling your eggs, but I've included my favorite below.
- Mustard: Dijon mustard is the go-to for egg salad recipes, but you can use yellow mistard if you want more of a bite.
- Herbs and other mix-ins: Chives, parsley, and red onions add classic flavor and color to the eggs salad.
Capers or anchovies add just a touch of brine. I like using canned or jarred anchovies because they not only add a punch of saltiness, but a satisfying umami boost as well. And don't worry - anchovies mash into the rest of the recipe without fishy flavor!

Instructions
- Prepare the hard-boiled eggs. You can use whatever your favorite method is, if you have one. I like starting with the eggs submerged in a pot of water, bringing it to a boil for 10 min, then removing the eggs to an ice bath!
- Meanwhile, mince the fresh chives and parsley. Chop the red onion.
- Blend the cottage cheese. Add the cottage cheese to a blender or use an immersion blender to blend until the cottage cheese is smooth.
- Once eggs are cooled, peel and chop them.
- Combine all the ingredients in a large bowl, stirring until everything is combined.
The best way to make hard-boiled eggs
The internet is full of hacks and tips for making the "perfect" hard-boiled eggs. Frankly, most methods work just fine and everyone has their preferred way to make them.
My go-to is probably the most traditional way:
- Carefully add eggs to a pot (no cracked shells here!)
- Add water until eggs are submerged at least 2 inches.
- Bring to a boil over high heat, cooking for 10 minutes.
- Remove eggs with a slotted spoon and immediately transfer to a bowl filled with ice water.
- Once cool enough to handle, gently crack shells and remove.
I tried a few methods for hard-boiling eggs and the shells were BY FAR easiest to remove this way!
What to eat with egg salad
Sure, you can eat egg salad on its own, but where's the fun in that?
Here are some suggestions for how to serve Cottage Cheese Egg Salad:
- Serve as a sandwich - I like it with sliced avocado!
- Eat over lettuce
- Use raw veggies like celery, cucumber, carrots as a vehicle for egg salad
- Serve in a wrap

How to modify this egg salad recipe
Want to change it up? Be my guest! Here are some suggestions on ways you can adjust the recipe:
- Use Greek yogurt: If cottage cheese is just not your thing (not sure how you ended up on this recipe), you can swap some or all of the cottage cheese for a thick Greek yogurt or skyr.
- Substitute or add different herbs: No chives on hand? Add more parsley, or try cilantro. Garlic lovers can add a clove or two of roasted garlic.
- Add pickles, celery, or pickled onions: Want more briney flavor or crunch? Add ¼ cup chopped dill pickles OR swap the red onion with chopped pickled red onions.
FAQs
Store leftover egg salad in an airtight container in the fridge for up to 3 days. Don't store with lettuce or bread, as it will get soggy. Best to prepare a salad, wrap, or sandwich right before eating.
Technically, no, if the texture of the curds don't bother you! For the best, creamy egg salad, though, I do recommend blending.

Ingredients
- 6 large eggs
- ½ cup blended cottage cheese
- 2-3 teaspoon Dijon mustard
- 1 teaspoon fresh lemon juice
- ¼ teaspoon sea salt
- Freshly ground black pepper
- ¼ cup finely diced red onion
- 1 tablespoon fresh chives, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon capers or anchovies
- ⅛ teaspoon paprika, for garnish
Instructions
- Carefully add the eggs to a pot. Pour in water until eggs are submerged by at least 2 inches of water. Bring to a boil over high heat. Boil for 10 minutes. Carefully remove eggs with a slotted spoon and immediately transfer to a bowl filled with ice water. Once cool enough to handle, gently crack shells and remove.
- Chop hard-boiled eggs into ¼-inch pieces. Add to a large bowl along with blended cottage cheese, mustard, lemon juice, salt, black pepper, red onion, chives, parsley, and capers. Stir until egg pieces are coated and everything seems well-mixed.
- Refrigerate until ready to eat. Will keep in the fridge, covered, for up to a week.
