    Simple, thick, and creamy, this SunButter Maca Smoothie needs only 5 ingredients — and one of those ingredients will probably surprise you. It's cauliflower!

    But don't let that scare you away from this smoothie. I guarantee you won't taste the cauliflower — instead, you'll be sipping on a slightly sweet SunButter-flavored treat.

    Why use cauliflower for smoothies

    Yeah, you read that right — this recipe features frozen cauliflower florets to create thickness and bulk in the smoothie.

    In many smoothie recipes, that role gets played thanks to bananas (frozen or fresh). While I enjoy the heck out of a banana-based paleo smoothie every once in a while, I also find myself getting bored of the unavoidable banana flavor that permeates any smoothie it touches.

    Enter mildly-flavored veggies like zucchini, avocado, and cauliflower. They can step in to play the same role as bananas in smoothies without overwhelming the flavor (as long as you've got other ingredients taking the reigns).

    Plus, you're creating a much more nutrient-dense smoothie by adding in veggies to your liquid treat!

    I highly suggest using frozen cauliflower for this recipe. It should be pretty easy to find frozen cauliflower in the frozen section of most grocery stores. But if not, you can buy fresh cauliflower, roughly chop it, and flash freeze it yourself.

    Why frozen? You won't need to use ice, which I prefer because my paleo smoothie won't be "watered down" while it melts. And smoothies are best when they're chilled!

    Creamy and simple, this nut free smoothie makes a perfect summer treat thanks to SunButter!


    Ingredients

    Scale
    • ¼ cup SunButter sunflower seed butter
    • 2 cups cashew milk
    • 2 tablespoons maca powder
    • 1 cup frozen cauliflower
    • 3 Medjool dates, pitted

    Instructions

    1. Add all ingredients to a blender. Blend on medium-high for about 3 minutes, until completely smooth. Serve cold.
