    Hot Honey Glazed Carrots

    If you want to spice up an average side dish, Hot Honey Glazed Carrots are the perfect solution.

    With a handful of ingredients, hot sauce and honey transform carrots into a sweet and spicy side that's full of flavor!

    Ingredients

    CARROTS: Try to choose carrots that are roughly the same size, and you should be good to go!

    HONEY: Any honey will do, but note that "lighter" or clover honey varieties will have a distinctly different flavor that might not work as well for hot honey.

    HOT SAUCE: I recommend a straightforward cayenne pepper sauce like Frank's Red Hot Original for this recipe. However, you can easily make this spicier or alter the flavor by choosing a different hot sauce.

    OLIVE OIL: A little fat helps the glaze stick to the carrots and promotes browning. You can use whatever cooking fat you'd like!

    Hot to make Hot Honey Carrots

    - Prep the carrots & roast: Peel the carrots with a Y-peeler, slice into coins, toss with some olive oil, and start roasting.

    - Make the glaze: While the carrots are in the oven, prep the glaze in a saucepan on the stovetop. Letting the glaze simmer for a bit reduces it down so it's ready to coat the carrots!

    - Toss carrots in glaze: Toss the carrots in the glaze and return to the oven for another 10 minutes or so.

    If you'd like to make preparing hot honey carrots a little more passive, you can prepare the hot honey sauce in advance!

    Follow the instructions for the hot honey sauce, simmering until it has reduced by about half.

    Remove from heat and transfer to a covered container. Store in the fridge until ready to make the carrots.

    Once you start roasting the carrots, remove the hot honey sauce from the refrigerator to let it come to room temperature. Proceed with the recipe as written.

    FAQs

    Can I make the sauce less spicy?

    Sure! Just increase the honey by 1 tablespoon and decrease the hot sauce by 1-2 tablespoons.

    What types of hot sauce do you recommend?

    Typically for hot honey recipes, I reach for Frank's Red Hot Original because it's easy to find! I also tested this recipe with Lola's Hot Sauce and it worked fantastically. Any cayenne pepper sauce should work well here.

    You can experiment with different types of hot sauce if you'd like - sriracha comes to mind!

    Can I prep the hot honey sauce ahead of time?

    Yes! Just combine the ingredients in a saucepan, bring to a boil, reduce to a simmer, and reduce to about half. Store in the fridge until you want to make hot honey carrots.

    Remove from the fridge when you start roasting the carrots to let the sauce come to room temperature before using.

    Serving suggestions

    These carrots bring a lot of flavor to the table, so I'd pair them with a relatively simple main.

    Crispy Chicken Thighs or mild Maple Dijon Chicken Thighs make great chicken protein options!

    On the other hand, carrots go well with pork, so give Grilled Pork Chops with Shallot Ghee or Macadamia-Crusted Pork Chops a try!

    Description

    Hot sauce and honey transform carrots into a sweet and spicy side dish that's full of flavor! Warning: these carrots do have a bit of a kick! To make them less spicy but still get that hot honey flavor, reduce the hot sauce by 1-2 tablespoons and increase the honey by 1 tablespoon.

    Ingredients

    • 1 pound carrots, peeled and sliced into ¾" coins
    • 2 ½ tablespoons olive oil, divided
    • ¼ cup cayenne hot sauce (such as Frank's Red Hot or Lola's)
    • 3 tablespoons honey
    • ½ teaspoon Kosher salt
    • ¼ teaspoon ground black pepper

    Instructions

    1. Preheat oven to 425 degrees F and line a rimmed baking sheet with parchment paper.
    2. Toss carrots with 1 tablespoon olive oil and spread out in an even layer on the baking sheet. Roast for 15 minutes.
    3. Meanwhile, in a small saucepan, combine the hot sauce, honey, remaining 1 ½ tablespoons olive oil, salt, and pepper. Bring to a boil, then reduce to a simmer. Simmer for 8-10 minutes, stirring occasionally, until reduced by about half. Remove from heat.
    4. Remove carrots from oven and pour hot honey sauce overtop. Toss to coat. Return to the oven for 10 more minutes, or until the carrots are tender and most of the glaze has evaporated or turned sticky. Once done, give the carrots a good stir and serve immediately!
